CELEBRATE MOM WEEK, BRUNCH !



I am sharing a brunch menu and recipes.  One of 
my friends had a Mother's Day brunch for us while
her grandchildren were at school. It was very good. The menu was simple and it was perfect for an new inexperienced cook.

                          Sunday, May 11th


                            Today's Menu

                      Bacon Impossible Pie
          Blueberry Muffins w/ Lemon Glaze
          Sliced Tomatoes on Bed of Lettuce 
                         Cranberry Mimosa
                                      Coffee

BLUEBERRY MUFFIN WITH LEMON GLAZE

18.25  box  wild blueberry muffin mix
3/4 C  milk
1/4 C  oil
2  eggs
1 T  lemon juice
1/2 C  powdered sugar


Preheat oven to 400 degrees. Place paper baking

cup in muffin tins. Drain Blueberries (from muffin mix); rinse and set aside.

In bowl add muffin mix, milk, oil and eggs just

until blended (batter may be lumpy). Gently stir
in the blueberries. Spoon batter into each muffin
cup until one-third full. Bake 10 minutes or until  
tops are firm to  touch.  Let cool completely.
Blend lemon juice and the powdered sugar
until smooth.  Use spoon to drizzle glaze in
circular motion over the muffins.








IMPOSSIBLE BACON PIE     


12 slices bacon, cooked and crumbled
1 C shredded natural cheddar  cheese
1/3 C chopped onion
2 C milk
1 C baking mix
4 eggs
1/4 tsp salt
1/8 tsp  pepper

Heat oven to 400 degrees. Grease 10 inch  pie plate.
Sprinkle bacon, cheese and onion in plate. Beat
remaining ingredients until smooth. Pour into plate.
Bake until knife comes out clean. 35 to 40 minutes.
Cool 5 minutes. 6 servings.
   



 



CRANBERRY MIMOSA








1 quart chilled cranberry juice
750 ml chilled champagne

Pour a champagne flute half full of cranberry juice.
Fill the remainder of the glass with champagne.

TIPS:  Mimosa are usually made to taste.  Adjust champagne & cranberry juice as needed.


Place a two slices of tomatoes with bed of  lettuce leaves your Mom's plate just before serving. Fill her favorite mug with her favorite coffee.  Prepare the mimosa and call her to brunch!!
