CHASE AWAY THOSE CHRISTMAS BLUES!


I often hear comments from.people about regretting that its time for the Christmas season.  I have never felft this way. 
I'll admit that I was sad during Christmas, the first year after my husband died. The sadness disappeared when I remembered the "Reason For The Season!".  Pondering on the Birth Of Christ was enough to bring me joy. The Bible verse 2 Corinthians 5:8 explains 
that when you're absent from the body, you are present with the Lord. Just knowing my husband is with the Lord in heavenly places,
brings me comfort.




The " blues" that we  Seniors.have can quickly turn into depression. We face a lot of situations daily that can make us sad.
My friends and I   call each.other when we are facing limited contact from our grown children, financial problems, or
experiencing pain from chronic illness. We give free therapy sessions to each other  because it's cheaper.  

Here are some things I do to chase away the " blues ":

Make a scrapbook with my favorite cards.from friends & family or pictures of fun past events.

Grow something!  There are tons of videos online on my computer
that helped me learn how to  grow herbs and house plants all year long.
You don't need a lot of space, just the desire to try.


Eat out! My friends & I have gotten vaccinated so we can continue
to.meet once a month for breakfast or lunch. We still wear our
mask, wash our hands.often, & practice social distancing.

Listen to music. I play all.kinds of.music. Be open minded.
Even County, Gospel,  & Classical music can be uplifting!

Cook something! I know it's easy to open a can of
something. I learned how to.cook simple meals by
 watching Cooking Shows.b I challenge my self to 
cook a simple meal from scratch to eat on Sunday.
 I set the table for.one,  with a pretty plate & silverware.
 I drink a glass of sparkling juice, coffee, or tea. 


Purchase a simple cell phone to play simple  games 
like solitaire  & words search. Buy Puzzle and Word Search
books from dollars stores to work.on,  if you don't want to 
get a cell phone. I was intimidated  about using a  cell phone
to text, take pictures, and play games.  My sons bought me
 a cell phone and taught me how to use it. Senior Centers
even have computer classes. My son  said that emergencies 
can happen when I am away from.home, so I needed a cell
phone.  I eventually had my son order me  a large screen tablet
because I hated playing games or watching movies on a small 
cell phone screen.  Thank God there are companies making 
simple cell phones for Seniors.

Visit your local Senior Center. Every city has these centers in convenient
locations.  The  city even provides transportation for Seniors for nominal fee.
The Centers had to adjust their schedules due to COVID-19. A County Librarian
helped me find a Senior Center near me.  My Center offers chair exercise c!ass,
free movies, and craft casses.


Start projects. Let's face it!  There are always closets to clean out, clothes
& old bills to sort through, and a pantry to reorganize, I stay safe and avoid
climbing or other  dangerous movements. It's true Seniors fall and " can't
get up!" My doctors said Seniors have lost most of their  muscle tone and 
mass so they can't get up without assistance.

Make craft project  for each season. I learned how to make seasonal wreaths by watching 
online videos. It's fun to buy cheap items from a dollar store. I make simple but pretty wreaths 
for gifts and to place.on my front door. Take time to watch several craft.videos.There has got
to be something you think you can create!

GETTING PURPLE CHRISTMAS READY!

I have been putting up my faux pre-lit Christmas tree for the past few years. I was following
 tradition for a while with red decorations. A couple of years ago I saw a purple Christmas tree
with all the trimmings. I have been  hooked on purple since then. 

I went to a discount store searching for purple tinsel. They did not have any.
 I was disappointed because I saw a tinsel wreath craft online. I stumbled 
upon purple poinsettias mixed in a bunch of red and white poinsettias. 
The display was about seven feet tall. I was so happy that bought all of their purple
poinsettias!

I decided to make potted purple poinsettia arrangements for my front yard. I was
 able to get most of my items at a dollar store.. I bought the following items:

(1) Roll, Shiny Purple Gift Wrap ( 30 inches x 48 inches) 
(2) 8 inches to Plastic Sand Buckets (from toy section)
(2) Purple Mix Pansies
(1) Purple Rose Bud Bush

Note: Purple Wired Ribbon for a bow was  not available.
          8 inch planters  are an option

Also need: Scissors and Glue Gun with Glue Sticks

Directions

I filled both buckets with wet garden dirt. Green foam pot inserts also an option.
I made arrangements in the 2 buckets using the poinsettias, pansies, and roses.
I cut the shiny gift wrap in half and wrapped both buckets with it. I secured the
gift wrap tightly around the buckets using the glue gun.



I think these Purple Poinsettias Arrangements look great.  I plan to set the red chairs and the 
arrangements in my front yard after I my rake leaves. I hope my fellow Crafters will try this, using
non-traditional Christmas flowers too. I am going to keep looking for solid color purple wired ribbon.

SENIOR LADY QUICK MEALS, PART 2

I am sharing recipes for quick 

meals using items from Dollar

Stores and my local grocery

store. The meals serve one or 

two people.  Most of these meals

can be prepared in about

 30 minutes.






Meatball Sub:


Need: 


Hot dog or Sub bun, 4 meatballs, 

1/2 cup pasta sauce, 3 Tablespoons 

shredded mozzarella cheese. 


Directions: 


Cook meatballs, and pasta sauce, 

on  medium in a pan until meatballs

have  unthawed and heated 

through. The sauce should be bubbly. 

Place meat sauce into the bun 

and sprinkle with cheese.


Tip: Reserve rest of pasta sauce 

and bag of cheese for

pizza recipe give below.








PEPPERONI PIZZA



Need


12 inch  Pre-baked thin pizza crust,

pasta sauce, pepperoni slices, 

mozzarella cheese


Directions:


Spread enough pasta sauce

to cover surface of pizza crust.

Add slices of pepperoni then

top with cheese. Bake according

to directions on back of the pizza

crust package.


Tips: Buy pre-baked pizza crust,

pepperoni, and pasta sauce from

Dollar Store.







CHICKEN FILET SANDWICH



NEED:


Hamburger bun, chicken thigh,

mayo, lettuce and small tomato


Directions:


Let chicken thigh thaw

completely and pat dry. Cook

chicken in 2 tablespoons of oil 

in the skillet until golden brown

on both sides and no longer pink 

inside. Spread bun with

mayo, add chicken and top with

lettuce and sliced tomatoes.


Tip: 

Chicken thigh from

3-pound bag frozen chicken

CHICKEN LETTUCE WRAPS


Need:


2-5 oz cans chicken or turkey

mayo to taste

2 whole lettuce leaves

sliced tomatoes


Direction:


Drain chicken and place in 

small bowl. Flake chicken 

with a fork and add

mayo. Mix well. Divide 

chicken mixture and

tomatoes among

the lettuce leaves.  

Wrap leaves in shape 

of a log. Secure with

toothpicks if desired. 


Tips:


Can enhance flavor

with onion powder,

dried chives or

parsley, ground 

black pepper


Serve lettuce wraps

open-faced


 






CHICKEN QUESADILLA

( Mexican grilled sandwich)



Need:



4 flour tortilla shells

2- 5oz cans  canned chicken

2 cups Mozarella or Monterey Jack

shredded cheese

2 tablespoons Chili or Taco seasoning mix

Oil for cooking shells


Directions:


Drain chicken, and place in bowl.

Mix chicken with chili

seasoning mix and cheese until well 

blended.

Cover one shell with 2-3 tablespoons

chicken and cheese mixture,

and spread evenly. Place second shell

on top. Repeat process for second

sandwich. Heat oil in a skillet over

medium heat. Brown each sandwich

on both sides or until cheese has

melted. Cut sandwiches into wedges.

Taste great with salsa.




Tip:


Tortilla Shells and canned chicken

SENIOR LADY QUICK MEALS! PART 1

I must face it! I live alone and I have no

one to cook for!  I am a widow and my 

sons have left home! I no longer have

to plan meals and cook hearty meals 

for my husband and sons.  Frankly,

I used to love cooking more than doing housework.  


My friends and I used to take turns

serving brunch once a month. 

I enjoyed cooking an elaborate brunch 

for my friends.


Now,  the Virus, COVID-19 has invaded

my life. I am staying at home most of 

the time. I don't visit my friends anymore. 

We don't serve brunch any more because

of the government social gathering rules.


I still love to cook but I had to change 

my cooking methods. The new rule is,

cook less, cook tasty, and be budget-conscious

Dollar stores are a Senior Citizen's

best friend. I stock my pantry with

spices, canned meats, can veggies, 

pasta sauce, breakfast foods, dairy

products, baking staples, snacks 

and desserts from the Dollar

Stores. 






I purchase frozen veggies, frozen 

cooked meatballs and frozen bags

of chicken thighs and drumsticks

from the grocery store.  


I like the bags of frozen food because

I can reseal the bags after removing a single serving. I also buy fresh meat 

if it's on sale.  I re-pacakage the meat

into single servings in zip lock bags.

 I  label and date the meat and stack 

it in the freezer.  If I buy perishable

items like lettuce, tomatoes, fresh

veggies, I cook meals that week

that contain these ingredients.


A well-stocked pantry is a must. 

I walk-in pantry isn't always necessary

I purchased a four-tier shelving unit 

and attached a colorful curtain to the

top of it. A three or four-tier bookcase

or cabinet will work fine too. I placed

the pantry at the entrance between 

my kitchen and living room. This 

makes my pantry look like a 

room divider.

I always have spices like, onion and

garlic powder, Italian seasoning, dried parsley,

dried chives, paprika, and packets 

of chili mix on hand. You don't have

to be a gourmet cook to use spices. 

Any of these spices can perk up

veggies and meats. Sandwich bread expires before I can use it up. I buy 

five-count refrigerator biscuits, 

tortilla shells and dinner rolls 

or buns instead. 


A quarter-pound of ham or turkey from

the grocery store Deli has less sodium

and tastes great too.  I have a sandwich

and low sodium potato chips for a meal

often. I can try out new flavors of deli

meat since I am not buying a lot of it.
